A year ago today was the last time we had friends over. It was a Tuesday evening and we had corned beef,cabbage,red potatoes, soda bread, and a pistachio dessert. We played games and wore silly St Patrick's day hats. By Friday the state went into lock down and we were not allowed to go to church.
Now we did get to have people at Thanksgiving and New Years, but this was our close circle of family, and even as careful and isolated as we were, someone always ended up with covid. You just could not be too careful.
I contacted this older couple who came last year and asked if they had their shots and they both had them and so does Hubs. I will get my second one on Thursday morning. So we are getting together for dinner.tonight. I am so excited. I pulled out the Irish head gear and my Lil sis had ordered me a new game which she was going to gift me next Christmas, but I went over and reminded her that my Birthday was next week and she gave me the game, so we will have a new game to play.
I am serving, corned beef, cabbage, red potatoes, soda bread and Key lime pie. I bought some coconut flour as this friend is gluten free and I will make the crust with coconut flour, pecans, sugar and butter which blends well with key limes. I cannot beleive it has been a year and this mess still continues. But I am so grateful for the vaccine.
Then I hear on the news Italy and Germany are locking down for a third time and Paris has 4,000 people in ICU. I just shake my head and pray for deliverance from this pandemic. We all need to pray for these countries that did not get orders placed for vaccines before they were approved and are now in the waiting lines for vaccines.
Sluggy has managed to get her first vaccine and she should be fully immunized by the time I get to go visit my Sissie. I can hardly wait as we will have such fun. I am sure we will drive up to her place to accost her for a few days.
I need to get a little housework done, like dusting and stuff.
Do any of you celebrate St Paddy's Day? Do you cook any traditional food? Do you decorate a little? We always have, which seems silly to me now as my parents were SO SWEDISH. It must have started as a church function for fun and they just continued it. I know we always wore green so we were not pinched and Mom always made green frosted shamrock cookies.

We can never have too many celebrations, minor or major. Tommy and I have a St/ Pat button to wear tomorrow. I have a big sparkly shamrock on the door. We will have cabbage, potatoes, and something and maybe a pie with a pecan crust. It will probably be a chocolate pudding pie, not too Irish. my mother's side is Scots-Irish and the surnames show it.

DeleteWe always liked to go for beers and appetizers with friends. Not this year but bars will be packed ...tp 75% capacity and I'll be dodging people again.

ReplyDeleteWe aren't huge fans of corned beef and cabbage, but I will cook a corned beef to make reubens. I think there is some pie left from pi day too, so an easy meal.

DeleteYup I'm half Irish on my mother's side so celebrating here by raising a glass at home, normally it would be out to a pub for Irish musi and dancing but not this year or last as things were already being cancelled. It's three week since my first jab so to the supermarket for the first time in eight months today. I was so excited, - how sad is that ?

DeleteYour evening sounds fun. I'm not doing anything too special even though my great grandparents immigrated from Ireland. I do decorate a little for St. Patrick's Day. I will be making green jello for the kids for dessert tonight. And of course we are wearing our green. (Well not hubby who hates St. Patrick's day for some reason).

ReplyDeleteDoing nothing for St Patrick's day. I might open a can of corned beef hash to go with the French toast on the menu. Bread needs used up before it molds.
Get on a no show list. People don't show and then they can get you in.
DeleteNo cooking today. Had a murder preliminary hearing yesterday, and my youngest son barely avoided a tornado hitting where he was in south Tuscaloosa county. It did get a neighbor’s house, as well as Moundville was damaged, a little town south of Tuscaloosa. I was under warnings also, and did not get off work in time to go be with youngest ( I work two hours away) and could not get to him anyway, as the road was blocked by trees. So I am feeling some kind of way. He is fine but without power. Brings up bad memories of my oldest being smack dab in middle of 2011 Tuscaloosa tornado. The middle son is in Tuscaloosa county also so he was hearing sirens, asking about his brother, etc. My nerves are shot.
ReplyDeleteI remember those sirens as a kid and being woke in the night to get to the cellar. Hated it! So happy it missed your son, but still your nerves sister.
DeleteJust great, I just went under a tornado warning, again. This day has been loads of fun. Got my bike helmet on and heading to bathroom in middle of house. Sick of this. Almost the whole western part of the state has been impacted.

DeleteI cooked the traditional corned beef and cabbage last Friday for my family. Yum. I bought extra corned beef and had plenty so I could freeze 3 portions. I had my second Covid jab so can start seeing friends who have also had their 2 jabs. Enjoy your St. Patrick's Day feast with friends and family.
