It finally started to rain here, thank goodness. This has been such a dry, dry spring, summer and so far fall. It is scary as it leads to poor food production in our area. Plus water is so very expensive it adds to the high cost of living.
I am so grateful for the rain and I want to see alot more of it.
I am experimenting with gluten free flour today as I am taking dinner into a friend who has Celiac disease. Gluten free mixes are outrageous, so I just bought a couple of cups of gluten free flour and even that was pricey, but much less than a mix. I plan on doing a gluten free corn bread and a gluten free almond cake. I have no idea how they will turn out. But I will try.
I have to go to Wal mart sometime today for a few things we are low or out of. Then I think I will try and work on the other half of the food storage or the pantry we have that just needs better organization.
I have long term items, such at powder milk, salt, pastas and baking supplies. I want to organize these things better. The Christmas baking sales will be coming out soon and this is when I stock up on baking goods for the year.
DO any of you stock up on baking goods at Christmas? I am wondering if the sales will be dismal this year? I know last year I had a very hard time stocking up on butter. Usually I will buy 40 lbs and freeze it and I was not able to do that last year. SO I had to really watch for butter sales and get the limit that I was able to when they came out.
I had to run to my elderly freinds house today to check on her husband who is 94 and total care. She wanted to go to the Temple which is two hours away and I told her to go and I would check on him a couple of times and then bring over dinner when she returns at 6 so she doesn't have to cook. She txt me and said she had forgotten to take a lunchable out of the fridge and leave it by his chair and would I do that when I went to check on him. I just went a grabbed a 1/4 pound cheeseburger and fries before I went over. The sodium will be the same and heck he is 94 what else can happen now? He really perked up when he saw the burger and fries! There is a home health worker coming over at 2 and I will go back and check on him later in the day.
Have any of you done any cooking with gluten free flour before? I know I made a nut piecrust with coconut flour once. In fact I should check that flour it might go bad. Figure out something to make with it.
Any plans for your upcoming weekend? I have none except missionaries to feed on Sunday. Hopefully see the grandkids.

My daughter has been doing more cooking with different flours, but to be honest, I'm never sure what is actually gluten free or not. She's such a good cook and tries to support friends challenged with healthy eating as a household of one, she has lots leftover so shares. I should say a quarter pound burger on occasion for a man who has reached 94 should certainly get a pass if he enjoyed it! I just haven't really stocked up for a year on baking goods except for maybe pumpkin, as it gets hard to find times of the year and we like pumpkin bread and muffins year round.
ReplyDeleteWell he really liked it I can tell you that. The corn bread turned out great, but my almond cake pans are at my sister's, so I did not do the almond cake. Now I will have to experiment with the flours I have. I am going to cook up the pumpkins I have a freeze alot of it, because pumpkin was hard to find here last year also.
DeleteI always buy at least 30 ponds of butter when it goes on sale during the holidays. Last year I think I was able to get maybe 20. Right now I am down to only 6 so I am seriously hoping to find a sale or two this year.

DeleteSo sweet of you to help those folks! I remember when my fil was so sick, he wanted a good hamburger but my mil wouldn't get it for him since the dr was saying he needed to eat healthy. He died a few weeks later, and I always thought he should have gotten that burger.
ReplyDeleteAnyway my son was diagnosed with a mild gluten intolerance a few weeks ago, so it has been an adventure. I have tried a few gluten free products, and they are expensive and not very good. Let us know how the gluten free flour works out.

Well I have some gluten free flour and some coconut flour so I will do some experimenting. By the was chex cereal varieties are gluten free so you can make that check mix with rice chex and corn chex for the holidays'

DeleteI have used gluten free flour, almond flour (the most expensive) and simply blended Oats into a flour.

Deleteholidays are when I stock up butter and other things, on sale only, please! I don't get as much as you but I spread buying it over Thanksgiving, Christmas, Easter, and Memorial Day, and the 4th of July.

DeleteFor gluten-free folks, I find it easier to just make something that wouldn't ordinarily have gluten anyway. My go-to dessert is to bake a meringe "pie crust," fill with whipped cream and then top with fruit. Fresh fruit of any kind works great since there is already sugar in the meringue, but canned fruit (drained) or pie filling would work too.

ReplyDeleteI have been stocking up on baking supplies already. When I see them on sale in a flyer I pick up a few items. Butter never really goes for a really good price here so I use it sparsely in my baking and cooking.
How sweet that you picked up a burger and fries for your elderly neighbour and by doing so made his day. You also made his wife's day by telling her to go to Temple and you would take care of things.

DeleteHi Kim .. yes I have baked with Gluten Free flour before & just switched it out instead of ordinary flour. It was fine - the only thing is the cakes etc go stale much faster - they don't keep fresh or moist as long. I have been having trouble opening your blog & haven't been able to read your recent posts ... but today it was fine 👍 thank goodness as blogger does my head in some days!!!

DeleteEven when butter’s not on sale, i grab a couple here and there. I don’t like getting lower than about six. Today, i bought 4 bags of white choc. chips. They weren’t on sale but they are organic which is the first time i’ve ever seen that. I only use them sparingly so they should last until next year. I’m in the U.P. where we don’t have a newspaper, never get coupons and the nearest large towns are an hour away in any direction. No smart phone, either, so no ibotta etc..

Thanks Deb. You know you have to do what you can do, where you live. Gas is outrageous here and only $1.85 a gallon in some states down south.
DeleteAldi always has a great Christmas butter sale price. At one time I had 38 pound of butter in the freezer. I think I am down to under 12 now. Restock in December? yes!
ReplyDeleteI was at Walmart AKA The House of Evil today and noticed all the center aisles of Christmas baking things. I stock up for the year when all the sales are happening, but I also try to grab some milk chocolate after Halloween when things get marked down. I make Christmas Crack and give it to everyone so cheap milk chocolate is necessary.
I have done some GF baking and it is not difficult, but I don't really like the end product.
YEs I can't imagine gluten free is that great. After all I buy extra gluten for my bread baking. I hate Wal mart.
