Friday, Trying to reach a goal

I had an appointment with my specialist today and my blood work was good.  No changes in meds.  I asked him about a COVID shot and as he has been out of the country for 6 weeks he was behind on all that had been going down.  But he did say he was meeting with the powers that be to advocate for shots for his patients.  I told him I expected to come in today and get a shot. He was discouraged with the political atmosphere around the virus and the vaccine role out.  He said it had caused so many problems for the health care system. I made it very clear to him I was counting on him to advocate for all of us.  That was his job.  He needed to get on his boxing gloves and get into the fight.  He laughed at me but I think I scared him a little.

I am pretty darn proud of myself, as I now have $380.00 toward the $500.00 I need for Auntie.  I have sold many small things through facebook market place.  However on the downside much of the money that has come in has been in $5 dollar bills and then I have to save them.  Drat!  Hopefully more sewing will be picked up tomorrow and I will sell a few more items to reach my goal.  The less I have to take out of the checking account, leaves more money for my big bill payoff.

I am going to really clean my house today including the shop. Sissie will be so proud of me. Then I have a few piles of sewing and I will start on another wedding dress. The shop is a real mess right now and needs love. I also need to bay the monthly bills. Water, utilities, internet, phone, the rest are already paid or come out automatically.  Our heat bill and electric was $144.00 which is almost 1/2 of our old house and that is so nice.  Even the water bill was lower than it has ever been.  I will take it!

We ate the rest of the enchiladas for dinner and I think there is a little left for lunch tomorrow for hubs..  Now I have to go scare up something for dinner tomorrow.  I have lots of food so I just have to figure out what to cook. I know the missionaries requested pork chops again this Sunday, so I will avoid pork and we just had chicken..... so beef what? I might make a meat loaf.  I love meat loaf. Do any of you have a special recipe for meatloaf, or do you put in any unusual ingredients that make it extra tasty?

While I was at the specialists today, I saw two other ladies that were so crippled with arthritis.  One was in a wheel chair and could barely stand to be weighed.  I feel so  blessed that I have medications that work for me.  This is a rough disease that can really sap the life out of you if you let it get the upper hand.  I was older than both the women I saw and it shocked me. I often ask myself why I am so lucky?

Have a great and productive day saying positive while you are in the negative.

 Kim

  1. Fantastic job on the savings for your aunt! I am not gonna talk about the condition my house is currently in,......such a mess. I had to go to Walmart because my phone was running out of minutes (straight talk), and if I drag myself over there I am going to do a shop, so I got shrimp for $5, $1 frozen broccoli, $1.25 Brussels sprouts, roast beef sandwich meat, Swiss cheese for lunch, and equate antacids. because I use antacids every day and was about to run out. .I forgot the Diet Mt Dew.....sigh

  2. I will do a quick tidy of the main floor along with dusting and vacuuming. Then I get to do fun stuff like work on my quilt or do something else with my sewing machine (like sew the dress that has been cut out for awhile now).

Supper tonight is going to be salmon patties, homemade fries and a salad. I may stick some mixed veggies in there as well.

    God bless.

    1. Isn't it nice to just have a quick tidy and then do something fun!

  3. Does horseradish count as an unusual ingredient for meatloaf? Mine has the usual milk, eggs, ketchup, onion, and breadcrumbs, but also two tablespoons of prepared horseradish. I'm not sure what it does for the taste because I have always used this recipe (from my mother's 1952 Good Housekeeping Cookbook), and we love it. I also put two strips of bacon on top of the meatloaf instead of the ketchup the recipe calls for (flip the bacon after half an hour so it gets cooked perfectly) because that's what my mother always did!

    1. I have never used horse radish but I love it so I am going to try that. I will report what I think. Thanks for the tip!

  4. Hi Kim,
You have RA right? Your doctor says that you should get the vaccine? Im asking because it seems a lot of us with RA are confused if we should or not..I had so many things I wanted to get done the last few days but wound up in the doctor's office with a very serious tooth abscess that has had me in bed.... so, I put some laundry in this morning but don't kmow if I'll get to finish it. We will see

  5. When we first moved to CA, our neighbors got me into the lupus clinic (rheumatology) at Stanford. I was easily the healthiest person there, and every time I went, I felt so grateful that I was spared the more challenging parts of the disease. One of my former colleagues then died from lupus, and I remember her sitting me down when I was first diagnosed, and talking about how she managed her symptoms.

I feel lucky, and also guilty at times. I'm in "remission", if you will, and don't currently need to treat my lupus with medicine. I do get 9+ hours of sleep/day, and focus a lot on my health overall.

I'm so glad your blood work is stable.

    1. It is a real eye opener to go to the clinic and see what others deal with. I was diagnosed pretty young with the form of arthritis I have. Docs were surprised as it usually only attacks the really elderly, but runs in my family in the young. Weird. But these new meds are so good.

  6. Hello, Kim.
I wish I could help on the meatloaf, but would you believe I have never made one? Steve's mother made the BEST meatloaf, and so I never needed to. Now, he makes them! My own mom once was in the middle of making meatloaves and realized she didn't have anything to use, so would you believe she crushed up some Doritos??? It was delicious! Have a good weekend, my friend.

  8. I put a layer of stuffing in the meatloaf: meat on the bottom of the pan, prepared stuffing, then the last layer of meat. I also add onions, garlic, Dijon mustard, thyme, sage and celery salt to the meat to complement the stuffing spices. I haven't had one person who doesn't like this meatloaf, unless of course, they're not big fans of stuffing.

  9. My friend turned me on to her mother's meatloaf topping--
    1/4 cup ketchup
    2 tablespoons brown sugar
    1 teaspoon dry mustard
    1/4 teaspoon nutmeg

Mix all ingredients and spread over top of meatloaf before baking.

This covers a lot of meatloaf, like a square pan. I make mine into more of a loaf and use about half the ingredients to cover a 1-1/2 to 2 lb. loaf.

  10. Great job on saving so much so quickly. BTW I hate the 5 dollar bill game. I am doing it also. Every month I take out 150 bucks which is for non grocery purchases and as Sluggy calls it my WAM. In Jan. every single time I got change it had at least 1 five in it. Once I even broke a fifty and got back $20 in fives. By the end first week of the month I had $40 of my monthly allotment in an envelope that I can't touch until the end of the year.

    1. That last line is supposed to say at the end of the first week. I am afraid to buy anything now because I will only get 5's as change.

    2. Anne,
Get your money in 10s and maybe there will never be another 5.

    3. Well both my lil sister and I are doing this and we both txt each other and bitch about getting too many 5's but we have a contest going and I am winning!

  11. I put meat, eggs, salt, pepper, onions, bell pepper diced tiny, and last time I used canned tomatoes oats. On top, I just put catsup. Tommy and I both agree that bell pepper is a necessary ingredient. Otherwise, it is not meatloaf.

  12. The meatloaf i make is very much like everyone else mentioned.
I save my fives, too. But, i’m not as strict as you are about not spending them. If i need cash, and don’t want to use the debit, i’ll grab the fives. I’ll use them for Christmas, too.
I have osteoarthritis and a few other issues. I think the secret to being relatively okay is being active. You dance and walk and just MOVE every day. Hawaii Planner exercises, i exercise and i walk with three other women who do a lot of moving and they are older than i am. The secret to life, help others and move your body!

    1. This is so true. Saying still because you hurt is the worst thing you can do with arthritis. You have to move even when it is hard.

  13. I only have age-related arthritis that only shows up in a place or two now and then. I see women whose fingers are twisted and people in such pain. I, too, wonder how I am so lucky to still not have so much wrong. Of course, I do have other serious problems, just not crippling arthritis, thank goodness.

    1. That is a kind of osteo arthritis they can do nothing about. Actually Ra is easier to treat than progressive osteo.

  14. basic meatloaf, 3 lbs hamburger, 3 eggs, 1 sleeve of crackers crushed fine, 1/3rd cup of dried chives,1/3rd cup of garlic powder and 1/3rd cup of onion powder. I will add some water...maybe 1/2 cup as I want a "wet" mixture. Chives can be cilantro (I dry my own) and garlic powder and onion powder be Taco seasoning. I make my meatloaf spread on on a small cookie sheet (well 2 cookie sheets) and score them to make patties. That way we aren't eating leftover meatloaf but I can also thaw a couple in the microwave and then pan fry. I will also bake them in brown gravy in the oven if I don't want to thaw they....think store bought frozen Salisbury steak

  15. I too feel almost fit at the rheumatologist office-and have been fortunate to get access to both physical therepy and medicine when needed that helps manage flair ups. I'll wait for my spot in line since I can work from home. I might feel different if our every day. I hope my husband is with the next groups though.
